Zucchini Bread
2 eggs, beaten
3/4 c white sugar
2/3 c brown sugar
2 tsp vanilla
3 c grated fresh zucchini, do not drain
2/3 c melted butter
2 tsp baking soda
pinch of salt
3 c all-purpose flour
1/2 tsp nutmeg
1 Tbsp cinnamon
1/4 tsp ginger (optional)
1 c chopped walnuts or pecans (optional)
1 c dried cranberries, raisins or apricots or a
combination of all three  (optional)
2 Tbsp orange zest  (optional)

Preheat oven 350 degrees.  Spray two 5x9"
loaf pans with cooking spray.
In large bowl mix together sugar, eggs and
vanilla.  Mix in the grated zucchini and then
melted butter.  Sprinkle baking soda and salt
over the mixture and then mix in.  Add the
flour in thirds mixing in between.  Sprinkle in
cinnamon, nutmeg, ginger and orange zest
and mix.  Fold in the nuts and dried fruit if you
are using.

Divide the batter equally between greased
loaf pans.  Bake 1 hour at 350, checking for
doneness at 50 minutes.  A wooden toothpick
inserted in the center of the loaf should come
out clean.  

Remove from oven when done and let cool
for 10 minutes.  Then remove from pan onto
wire rack and let cool thoroughly.  Enjoy!
